Beetroot Dip







On my Facebook page , I had mentioned this past weekend that I have been really bored with my usual snacks and meals so I decided to go out and grab another cookbook to hopefully inspire some new meal and snack ideas.  Well this one is completely different then anything I have had before that I worked into the meal plan.

Beetroot Dip, it's very pink and pretty!
I have never heard of this before but it took not even 10 minutes to whip up and it tastes really good.

Pair with crackers or even veggies it would taste good.

You'll need:
  • 2 beetroots, scrubbed and grated
  • 1 can of cannelloni beans, drained and rinsed
  • minced garlic - 2 cloves
  • pinch of sweet paprika
  • pinch of nutmeg
  • lemon juice to taste - I used 1 tbsp
  • sea salt and pepper to taste
  • 12 plain rice crackers (or veggies to dip)
To make I just placed everything in my handy bullet and blended until smooth.  Store extra dip in refrigerator for up to 2 days.
