Strawberry Quinoa Parfait





If you're bored of the old eggs and oatmeal for breakfast, mix it up and give this one a try!

This makes 4 servings.
If you are following the 21 Day Fix the container breakdown would be a Purple, Red, and Yellow container per serving.

You will need:
  • 2 cups of cooked quinoa
  • 4 cups of sliced strawberries
  • 3 cups of low fat plain greek yogurt
  • 1 tbsp raw honey (or pure maple syrup)
  • 4 tsp chia seeds
Simple and easy to make:
  1. You're going to want to divide all these ingredients into four different containers.  Layer the quinoa, strawberries, yogurt, chia seeds and honey in a tall glass or bowl
  2. Serve immediately or cover and refrigerated for up to 3 days.

Since berries aren't cheap when they aren't in season, feel free to use frozen berries as a replacement to fresh strawberries :)
