Chili Spiced Chicken Salad




This lunch recipe was really simple to mix up on Sunday and then I had 4 healthy lunches out of the recipe for an easy grab and go lunch in the morning.

This recipe makes 4 servings and if you are following the 21 Day Fix Nutrition Plan it would be a Green, Red, and orange container

You will need:

  • 3 Tbsp.  Low fat greek yogurt
  • 2 Tbsp. fresh lime juice
  • 1 tsp. ground chili powder
  • 1 tsp raw honey
  • 3 cups cooked chopped grilled chicken breast, boneless, skinless
  • 1/2 cup raw pumpkin seeds
  • bag of baby spinach 

To make:
  1. Combine yogurt, lime juice, chili powder and honey in a small bowl, stir to mix and set aside.  This will be your dressing.
  2. Combine chicken, pumpkin seeds and dressing, toss gently
  3. Top four serving containers or plates with 1 cup of baby spinach leaves and then top evenly with chicken salad.
