Stuffed Peppers
This one I tried from the WHOLE30 cook book.
To be honest I've never tried stuffed peppers because I wasn't a real huge fan of peppers.
But I felt like I needed to switch up our dinners a bit so I decided to be "adventurous" and try something new right?
This recipe serves 2
So if you've got a family with young kids, I made this up and then had something else the kids liked with it. I made some chicken and then they had this as a bit of a side so they could at least try it and then eat the chicken too.
You'll need:
4 red, yellow or orange peppers
3 tbsp. coconut oil
1/4 cup finely chopped onion
2 cloves of garlic, minced
2 zucchinis, chopped
4 kale leaves, stems removed, leaves finely chopped
1 pound ground meat (we used turkey)
2 tbsp. tomato paste
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup finely chopped, peeled, squash (we used butternut)
PREHEAT oven to 350*F. Line a deep baking dish with parchment paper.
CUT the tops of the peppers off and gently pull off the steam and discard the seeds and core. Place the peppers in the prepared dish and bake for 10 minutes until softened.
While the peppers are cooking, you can prepare the stuffing. In a large skillet over medium heat, cook up ground meat. When the meat is all cooked through, you can add the rest of the ingredients and mix up until the squash is cooked and softened.
Divide the mean and squash mixture evenly amount he soften bell peppers. Return them to the oven and bake for 10-12 more minutes. The peppers should look wrinkly and the beef is slightly browned on top.
This dish is perfect for when you have extra veggies in the fridge that you want to use up. You can add mushrooms, spinach, cauliflower, broccoli too. The more vegetables you've got in your mix, the more stuffed peppers you can make so maybe use up and extra 2 - 3 peppers if you've got a lot more people to serve.
