Looking to squeeze some veggies into your kids tummies?
Try this delicious chocolate zucchini bread!
It's a hit with our kids! It doesn't have a whole lot of sugar, and being that it's chocolate, they'll easily eat it ;) Loaded with zucchini and super moist!
Here's how you make it:
INGREDIENTS:
- 2 eggs
- 1/2 cup sugar
- 1/3 cup olive oil
- 1/2 cup greek yogurt
- 1 tsp vanilla extract
- 1 1/2 cups of flour
- 1/3 cup of cocoa powder
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3 cups grated zucchini
- 1/2 cups chocolate chips
- 1 TBSP chia seeds (optional)
- Preheat oven to 350F. Grease 2 loaf pans and set aside.
- In a large bowl, beat eggs and sugar. Add in olive oil and yogurt and mix well.
- Add in cocoa and mix with a spatula. Stir in vanilla extract.
- In a separate bowl, mix flour, salt, and baking powder. Stir until mixed and then stir into the egg mixture gradually.
- Add in grated zucchini and stir just until it is coated with the batter
- Stir in 1/4 cup of the chocolate chips. Don't over mix
- Split the batter into the two pans. Top each with the rest of the chocolate chips and the chia seeds and bake for 65 minutes
- Let cool completely until slicing.
